This Potato Cheese Soup is wonderful. Serve with bread, salad or in addition to your regular meal. This is an awesome left over, just add a little cheese on top. |

INGREDIENTS:
- 8 - 10 medium potatoes peeled and quartered
- 1 large onion, finely chopped
- Cover potatoes with water
- 1 table spoon of Salt
- 1 (8 ounce) can of evaporated milk
- 3 table spoons butter
- 1/8 tsp pepper
- 1 cup Sharp Cheddar Cheese

PREPARATION:

Peel
and
wash
potatoes,
cut
them
up
in
small
pieces,
then
put
them
into
a
large
pan.

Bring
potatoes,
onions,
butter,
milk,
water
salt
and
pepper
to a
boil.

Use
fork
to
make
sure
potatoes
are
tender.
-
Add
cheese,
reduce
heat;
cover
and
simmer
until
cheese
is
melted,
takes
3 -
5
minutes.

*Additional information* If you can't eat cheese then substitute with 2 table spoons of flour. Put flour in a small bowl, mix with warm water to make loose paste, then after potatoes are done, instead of cheese stir in the flour mixture. Stir until desired thickness, then turn off the stove and your ready to eat. |
